The Winery doesn’t sag in the middle. If you’re out to rediscover Singapore, The Winery’s holiday platter serves its purpose with bone marrow, Spanish breakfast + caviar, tuna fritters and the Josper grilled short ribs. Yum.

Nothing beats that Josper grilled short ribs. I thought it was going to be dry but it was tender and fatty. You can’t go wrong with fat.

Also the Spanish breakfast was not your usual breakfast: Poached egg, potato foam and chorizo with caviar. I’m conflicted with this bowl. Not sure if I like it but we gobbled the poached egg anyway. Great for the crusted bread which surprisingly, wasn’t a jawbreaker.

While their paella is not that authentic, (it tasted like toasted rissotto) but it was really good. I liked the Valenciana (a staple) over the squid ink paella. I was worried my lips were going to turn black but I washed it down with two glasses of Sangria. (Interesting that they also broke my assumption that the Sangria is going to be 80% juice and 20% wine and I was wrong. It was the strongest sangria ever, left overnight with brandy.) Needless to say, if it weren’t for the Bone Marrow and Carabinero Tartar, I was going to get wasted.

And the dessert was Cava Granita. Chjimes was toasty warm and it melted in no time. But who needs dessert when you have Sangria?

Overall, I would recommend The Winery to anyone wanting to rediscover Singapore at Chjimes. For a time, I forgot we were in a pandemic.
